Vegan Gluten Free Waffles / No Refined Sugar

A few weeks back I bought the cutest little pink waffle maker, and all I wanted was to find the perfect recipe and start using it. The problem was that I was not only looking for the classic waffles recipe but the vegan, gluten free and sugar free version. I tried a bunch and I just wasn’t satisfied with the results until now. This is the perfect recipe in my opinion! And as a cinnamon junkie, I knew I had to add some spices to make it even better. For toppings I went with vegan nutella and banana slices. So yummilicious!!!!!



Vegan Gluten Free Waffles 

Ingredients:

  • 1 1/2 cups non-dairy milk ( I use cashew milk with a tsp of apple cider vinegar)
  • 1/4 cup coconut oil
  • 2 tsp vanilla
  • 2 tbsp ground flax seeds + 3 tbsp water 
  • tbsp pure maple syrup
  • 2 cups gluten free flour 
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg 
  • 1/4 tsp salt
 Directions:
Preheat your waffle maker.
Mix the flax seeds and water and set aside for 5 minutes. I’m lazy so I only use one bowl and add the wet ingredients and then slowly the dry. Pour enough waffle mixture into waffle maker and close it. Cook according to your own maker’s directions.
